Sunday Afternoon

I lost Sunday morning, you know those weekend morningswhere you keep turning over and going back to sleep.  Well I had one.  It's nice sleeping in but I lost my morning, the most productive time of the day for me.  But I have been able to finish up a few things and even had time to bake an apple pie.  Haven't baked a pie in ages.  Pie is the one baked item we do finish up around here, not sure why I don't do it more often. 

I've got Mom's old crust recipe which is pretty easy.  What I like about it the most is it is an easy dough to work with.  Doesn't crumble when you are working it.  If you're interested here it is:

3/4 cup butter
dash salt
1/4 cup boiling water
Mix together till smooth, I just use a fork.
Slowly mix in 2 cups flour.
Knead a bit then roll out and bake acording to your favorite filling recipe.  I baked this pie for 50 minutes in a 425 degree oven
This is enough dough for a 2 crust pie. 

I tried many pie crust recipes before my sister came over to help me one day and said she only uses Mom's old recipe.  I could never get the crust from the cloth into the pan without it falling apart.  I think the trick is the hot water. 

Can't wait to cut into it, I've got the cheddar cheese ready and waiting.  My honey wants ice cream.  To each his own.

Hmmm apple pie and cheese? Sounds interesting. I've always loved an apple with a piece of cheese so must give it a go. Your's certainly looks good enough to eat :-)

I hope it was nice. Gotta have ice cream with hot pie :). I've never baked apple pie before. I know where to come to for a recipe if I decide to start baking :)
